Winter Season Muffins

I love muffins so much. Crazy love. But a store-bought muffin is just too sugary and is likely to be nutritionally empty. This is actually great because it gives me the opportunity to make my own wholesome, homemade muffins and follow Ayurvedic wisdom when preparing them.

Winter can be very tough. It can be a challenge for many of us… Some may struggle emotionally, others with weight gain, constipation, or congestion… It definitely put a toll on my body and mind until I started living Ayurveda...

AYURVEDA TAUGHT ME TO LIVE IN HARMONY WITH THE RHYTHMS OF NATURE, ADJUSTING TO THE CHANGES IN THE ENVIRONMENT THROUGH WHAT I EAT, HOW I EXERCISE, WHAT HERBS I INGEST, AND SO ON.

Each season can either pacify or aggravate our individual constitution ( prakruti). Understanding the qualities of each season can help us counterbalance the potential for seasonally-induced imbalances. We cannot control the changes of weather but we can control our lifestyle -- building health, vitality, and resistance to disease.

So, when cooking I take into consideration all of the above. I consider the qualities of the season in my area, our individual prakruti, and the current state of balance of each of us in the family.

Below, I offer a recipe for winter season muffins which have some really great qualities: 

  • They satisfy our tummy without taxing our digestion.

  • The spices stimulate our digestive fire and lighten up the recipe.

  • The choice of flour helps to further lighten the recipe.

  • The high fiber content supports elimination.

Remember to always adjust recipes based on the season's qualities of your area or your dosha type, or any imbalance you may be dealing with. 

Winter Season Muffins

makes 12 muffins

INGREDIENTS

1 cup of buckwheat flour

½ cup of almond flour

½ tsp salt

1 tsp baking soda

¼ cup ground flax seeds

¼ cup maple syrup

1 ½ cup of cooked apples (2 medium apples), chopped tiny

1/3 cup coconut oil or ghee

½ cup water

Egg replacer – equivalent to 2 eggs

2 tsp of fresh grated ginger

1 ¼ tsp cinnamon

¾ tsp nutmeg 

¾ tsp cardamom

1 cup walnuts, toasted and chopped

PREPARATION:

1.   Preheat the oven to 350 F

2.   Cook chopped apples, ¼ cup water, and fresh grated ginger in a medium saucepan over medium heat, stirring occasionally for 10 to 15 minutes or until apples are very tender.

3.   In a large bowl, mix the buckwheat and almond flour, salt, baking soda, and flax seeds

4.   In another bowl, mix the wet ingredients: maple syrup, ¼ cup water, egg replacer, coconut oil with the gingery apples, and the 3 dry spices.

5.   Combine the ingredients of the two bowls together with a few strokes. Avoid overmixing.

6.   Add the walnuts to the mixture.

7.   Transfer it to your muffin tin.

8.   Bake for 30 minutes.

9.   Bom apetite!

Starting the day with a fresh cooked meal is ideal but it is not always possible… So take the time to prepare these muffins on the weekend and you will be so thankful on those hectic mornings when you just don't have the time. Remember to always adjust recipes based on your current state of balance.
